Lemon Bars
Cook Time: 35 min. Makes 16 Bars
Crust
1 cup (250 mL) flour
1/3 cup (75 mL) Challenge® CANADA or BENSON'S® Corn Starch
1/2 cup (125 mL) powdered sugar
1/2 cup (125 mL) butter or margarine, softened
Filling
3/4 cup (175 mL) sugar
2 eggs
1 tablespoon (15 mL) Challenge® CANADA
or BENSON'S® Corn Starch
1/4 teaspoon (1 mL) baking powder
3 tablespoons (45 mL) lemon juice
Additional powdered sugar for topping
Directions
Preheat oven to 350°F (180°C).
Combine all CRUST ingredients (flour, corn starch, powdered sugar
and butter) in a small bowl until well mixed and crumbly. Press into
bottom of 8x8-inch pan. Bake for 15 to 20 minutes or until edges are
lightly browned.
While CRUST is baking, combine all FILLING ingredients in a small
mixing bowl. Mix with electric mixer or wire whisk until well blended.

Pour filling over hot crust. Return to oven and continue baking for 18 to 20 minutes or until filling is just set. Cool completely. Sprinkle with powdered sugar.
